Pork & Arugula panini

On the stove
- In a heated skillet set over medium-high heat, cook cutlets coated in olive oil for 2 minutes on each side, or for medium rare, until a cooking thermometer inserted in the meat reads 60 °C (142 °F).
- Sprinkle cutlets with paprika and season with salt and pepper.
- Slice each bun in half along the side and open to garnish with arugula, apple slices and cheddar. Add a pork cutlet and close bun.
- Place sandwiches in a skillet set over medium-high heat and grill each side while pressing down with a spatula.
