Loin Roast with Pears & Cranberries

  1. Place oven rack in middle position. Preheat oven to 160°C (325°F).
  2. With the tip of a knife, make small incisions in the roast and insert garlic. In a large, oven-safe skillet over medium-high heat, heat oil and lightly brown roast on all sides. Season with salt and pepper.
  3. Arrange onion, carrot rounds, pears, and cranberries around the roast. Add broth and bake for 30 minutes. Season with herbs and continue baking for 10 minutes or until a thermometer inserted in the centre of the meat reads 60°C (140°F) for pink doneness. Set aside on a plate. Cover with foil and let stand for 15 minutes.
  4. Recover cooking juices and pour into a saucepan. Over medium heat, reduce by one-third and use as gravy. Carve roast into thin slices and serve with vegetables and fruit. Serve with gravy.
