Pork Chili

On the stove

  1. In a large skillet set over medium-high heat, heat oil and brown pork, breaking it apart with a wooden spoon. Add bell pepper, onion and chili powder. Continue cooking for another 4 to 5 minutes. Season with salt and pepper.
  2. Add arrabiata sauce, the kidney beans and the corn kernels. Bring to a boil and simmer, half-covered, for 20 minutes.
  3. Serve with corn chips, cilantro and lime wedges or serve in corn tacos (or on soft corn tortillas) topped with shredded lettuce, sour cream, chopped green onions and shredded cheddar cheese.
