Parisian-Style Burgers

Preparation

On the BBQ

  1. In a bowl, mix mayonnaise, 15 mL (1 tbsp.) mustard, pickles, capers, lemon juice, parsley, salt and pepper. Set aside in the fridge.
  2. Preheat BBQ to medium or use a grill pan.
  3. In a bowl, mix pork, onion, remaining mustard and lemon zest.
  4. Shape meat mixture into four 1-cm (½-in.) thick patties and season with pepper to taste.
  5. Grill pork patties on the BBQ or in a hot grill pan for 3–4 minutes on each side. Season with salt after cooking.
  6. Serve in kaiser rolls garnished with leaf lettuce and the prepared mayonnaise remoulade.
