Pork Provençal

On the stove

  1. In a large heavy-bottomed saucepan, heat the oil over medium-high heat. Brown the pork cubes for 3–4 minutes. Season with salt and pepper. Sprinkle with flour and continue cooking for 1 minute, stirring constantly. Add the garlic and cook for 1 minute.
  2. Add the wine and tomatoes while stirring and bring to a boil. Season with salt and pepper. Cover and simmer gently for 35 minutes.
  3. Add remaining ingredients and return to a boil. Cover and simmer gently for 20 minutes or until meat and vegetables are tender.
