Pork, Fennel & Pastis Stew

On the stove

  1. In a large heavy-bottomed saucepan, heat oil over medium-high heat. Brown pork and onion for 3–4 minutes. Season with salt and pepper. Sprinkle with flour while stirring and cook for 1 minute.
  2. Add broth, tomatoes, wine, and fennel. Season with salt and pepper. Mix and bring to a boil. Cover and simmer very gently for approximately 45 minutes or until the meat is tender. Add the pastis and season to taste.
