Pork, Zucchini & Corn Skewers
On the BBQ
- In a large bowl, mix the pork cubes with the dressing. Cover and refrigerate for at least 20 minutes (or up to 6 hours).
- Preheat barbecue to medium heat or use a grill pan.
- Thread pork cubes onto the skewers, alternating with vegetables. Season with pepper.
- Grill skewers on the barbecue or in the hot grill pan for 6–8 minutes, turning them with tongs, brushing regularly with marinade. Season with pepper. Replace corn and zucchini with pieces of red pepper and mushrooms.
