BBQ Pork Loin Steaks

  1. Place pork loin on a work surface. Use a long knife with a narrow blade to cut loin in half horizontally along its length. Using a meat mallet, lightly flatten the two steaks to a more or less uniform thickness, about ¾ in. (2 cm) thick each. Using the knife tip, score the cut side of the steaks. Season with salt and pepper on both sides.
  2. Mix all marinade ingredients in a baking dish or freezer bag. Add steaks and coat well with marinade. Cover dish or close bag. Cover and let marinate in the fridge for 4 hours.
  3. Preheat barbecue to medium-high heat and brush grill with oil. Let steaks reach room temperature while making the sauce.
  4. Bring all sauce ingredients except toasted flour to a boil in a small saucepan. Gently simmer for 5 minutes. Remove from heat. Season with salt and pepper to taste. Discard sprigs of thyme or rosemary. Reserve 2 tbsp. (30 mL) of the sauce in a small bowl.
  5. Bring saucepan to medium heat. Add flour and simmer, whisking until sauce thickens slightly, about 2 minutes. Remove from heat. Season to taste. Cover and keep warm.
  6. Drain pork steaks and discard marinade.
  7. Grill steaks on the barbecue for 6–8 minutes on each side or until pink in the centre. Brush steaks with sauce while cooking.
  8. Transfer steaks to a board and let sit for 5 minutes before slicing.
  9. Serve sliced pork with sauce. Serve with potato or tomato salad and grilled asparagus, if desired.
