BBQ Pork Loin Steaks

On the BBQ
- Place pork loin on a work surface. Use a long knife with a narrow blade to cut loin in half horizontally along its length. Using a meat mallet, lightly flatten the two steaks to a more or less uniform thickness, about ¾ in. (2 cm) thick each. Using the knife tip, score the cut side of the steaks. Season with salt and pepper on both sides.
- Mix all marinade ingredients in a baking dish or freezer bag. Add steaks and coat well with marinade. Cover dish or close bag. Cover and let marinate in the fridge for 4 hours.
- Preheat barbecue to medium-high heat and brush grill with oil. Let steaks reach room temperature while making the sauce.
- Bring all sauce ingredients except toasted flour to a boil in a small saucepan. Gently simmer for 5 minutes. Remove from heat. Season with salt and pepper to taste. Discard sprigs of thyme or rosemary. Reserve 2 tbsp. (30 mL) of the sauce in a small bowl.
- Bring saucepan to medium heat. Add flour and simmer, whisking until sauce thickens slightly, about 2 minutes. Remove from heat. Season to taste. Cover and keep warm.
- Drain pork steaks and discard marinade.
- Grill steaks on the barbecue for 6–8 minutes on each side or until pink in the centre. Brush steaks with sauce while cooking.
- Transfer steaks to a board and let sit for 5 minutes before slicing.
- Serve sliced pork with sauce. Serve with potato or tomato salad and grilled asparagus, if desired.
