Maple glazed pork ribs

Preparation

In The Oven

  1. Place oven rack in middle position. Preheat oven to 165 °C (325 °F).
  2. Combine all dry rub ingredients in a bowl. Generously season with pepper.
  3. Place ribs on 2 large sheets of aluminum foil. Rub ribs with dry rub on all sides. Close foil to seal and place on a large baking sheet.
  4. Bake for 1 hour 30 minutes. This can be done the day before.
  5. Meanwhile, in a medium saucepan set over medium heat, melt butter. Add ginger and garlic. Cook for 2 minutes, stirring constantly. Add remaining ingredients and bring to a boil, continuing to stir. Reduce heat and simmer for 10–15 minutes or until sauce is thick and syrupy. Set aside.
  6. Preheat barbecue to medium or turn on oven broiler.
  7. Remove ribs from foil and cut into sections of 5 ribs each, if desired. Return to baking sheet and brush ribs with maple glaze on all sides. Grill ribs on the barbecue or in the oven for 5–6 minutes per side, brushing with sauce as desired.
  8. Serve with wedges of pineapple, red onions, grilled sweet potatoes and homemade coleslaw, if desired.

Slow cooker

  1. Cut ribs into sections of 5 ribs each.
  2. Rub ribs with dry rub and place vertically in slow cooker.
  3. Cover and cook on high for 4 hours or on low for 6 hours.
  4. Follow steps 5 to 8 above.
