Steak spiced pork loin

  1. Place oven rack in middle position. Preheat oven to 190 °C (375 °F).
  2. In a skillet set over medium-high heat, brown loin on all sides in half the oil. Transfer loin to a large baking sheet. Season with salt and pepper. Brush with mustard and rub with steak spices, pressing spices into meat. Set skillet aside.
  3. Cook roast for 20 minutes.
  4. Meanwhile, combine vegetables with remaining oil, maple syrup and herbs in a large bowl. Season with salt and pepper. Set vegetables aside on a plate.
  5. Heat skillet over medium-high heat and deglaze with chicken broth. Simmer for 2 minutes, scraping the bottom of the skillet with a wooden spoon. Keep warm.
  6. Remove baking sheet from oven. Spread vegetables around the loin. Roast in oven for 25–30 minutes or until a thermometer inserted in the centre of the meat reads 60 °C (140 °F). Place roast on a cutting board, cover with foil and let stand for 10 minutes before slicing. Continue cooking vegetables for a few minutes if needed until they are tender and golden brown.
  7. Bring reserved stock to a boil. Remove from heat, add butter and stir until melted. Season with salt and pepper.
  8. Serve roast slices with vegetables. Drizzle with broth.
