Pork Rolls with Rasberry Sauce

    Preparation

    1. Preheat the oven to 190 °C (375 °F). Spread onions over the bottom of an oven-safe dish. Combine roll ingredients and season. Shape into 7.5-cm (3-in.) cylinders and coat with flour.
    2. Fry pork rolls in oil and place in oven-safe dish on top of onions. Deglaze skillet with vinegar and add all remaining ingredients, except raspberries and cornstarch mixture . Bring to a boil and pour sauce over pork rolls.
    3. Continue cooking in the oven for 30 minutes. Drizzle with sauce while cooking, adding raspberries in the last 5 minutes of cooking. Add cornstarch mixture to thicken sauce. Remove whole juniper berries, if using, and set raspberries aside for serving.
    4. Serve over a bed of onions and topped with sauce, with a side of rice and seasonal vegetables.
