Tonkinese Soup with Strips of Pork

On the stove

  1. In a medium saucepan, bring broth to a boil with lemongrass, ginger, and garlic. Cover and simmer gently for about 10 minutes. Season with salt and pepper.
  2. Meanwhile, in a large wok or non-stick skillet over medium-high heat, heat oil and brown pork strips for approximately 2 minutes. Season with salt and pepper.
  3. Divide rice noodles, bok choy, mushrooms, bean sprouts, radishes, pork, onions, and cilantro into 4 large bowls. Cover with broth. Serve with a Chinese spoon and chopsticks.
