Satay Skewers with Peanut Sauce
On the BBQ
- In a bowl, mix the soy sauce, honey, sesame oil, and garlic. Add the pork strips and coat well. Cover and let marinate in the refrigerator for at least 20 minutes (for increased tenderness, marinate for up to 6 hours).
- Prepare the peanut sauce. In a saucepan, combine all peanut sauce ingredients and bring to a boil over medium heat while stirring. Simmer gently until the sauce thickens. Keep warm.
- Preheat the barbecue to medium-to-high heat or use a grill pan.
- Thread the strips onto the skewers. Grill on the barbecue or in the hot grill pan for about 1½ minutes on each side, basting with marinade. Serve pork skewers with the peanut sauce.
