Pork Skewers on Italian Salad

On the BBQ

  1. In a large bowl, combine pesto, oil, and vinegar. Reserve 60 mL (¼ cup) of the marinade in the refrigerator.
  2. Add pork cubes to the remaining marinade and coat well. Cover and refrigerate at least 2 hours (or up to 12 hours).
  3. Preheat barbecue to medium heat or use a grill pan.
  4. Spread the cheese on a large plate. Set aside.
  5. Thread pork cubes onto the skewers, alternating with the tomatoes and mushrooms. Season with pepper to taste.
  6. Grill skewers on the barbecue or in the hot grill pan for 6–8 minutes, turning them with tongs, brushing regularly with marinade. Season with pepper.
  7. Roll the still-hot skewers in the cheese. Serve over romaine lettuce dressed drizzled with remaining pesto marinade.
