Antoine’s pork smashburgers

  1. Cook bacon in a skillet or the oven until crisp. Set aside
  2. Form 8 3-oz. patties (the size of a door handle) using ground pork.
  3. Heat a skillet or griddle over high heat.
  4. Place 2 patties on skillet at a time and immediately crush with a spatula. Season with salt and pepper.
  5. Cook for 2–3 minutes, flip, then place a slice of cheese on each patty.
  6. Assemble burgers using 2 patties per bun.
  7. Top with bacon, pickles and homemade sauce.
