Antoine’s pork smashburgers

On the stove
- Cook bacon in a skillet or the oven until crisp. Set aside
- Form 8 3-oz. patties (the size of a door handle) using ground pork.
- Heat a skillet or griddle over high heat.
- Place 2 patties on skillet at a time and immediately crush with a spatula. Season with salt and pepper.
- Cook for 2–3 minutes, flip, then place a slice of cheese on each patty.
- Assemble burgers using 2 patties per bun.
- Top with bacon, pickles and homemade sauce.
