Jean-Piquant’s Al Pastor pork burgers

On the stove

Patty

  1. In a large bowl, combine ground pork, all spices and salt.
  2. Mix by hand or using a spatula until ingredients are fully incorporated.
  3. Divide mixture into 4 equal portions and shape into patties.
  4. Cook burgers on the grill or in a hot skillet for 6–8 minutes, turning halfway through cooking, until golden brown and fully cooked.

Mashed avocado

  1. Cut avocados in half, remove pit and scoop flesh into a bowl.
  2. Mash flesh with a fork until smooth.
  3. Add lime juice, salt and hot sauce to taste.
  4. Mix well and refrigerate until burgers are assembled.

Pickled onion

  1. Place sliced onion in a small bowl or jar.
  2. Combine water, vinegar and salt, then pour over onions.
  3. Let marinate for at least 30 minutes (ideally 1 hour) before serving.

Assembly

  1. Grill pineapple slices on the grill or in a skillet
  2. Lightly toast brioche buns.
  3. Place a pork patty, a slice of grilled pineapple, a little mashed avocado, pickled onions, cilantro and a spoonful of sour cream or Greek yogurt on each bun.
  4. Add hot sauce to taste, top with other half of burger bun and serve immediately.
