Jean-Piquant’s Al Pastor pork burgers
Ingredients
Patty
Mashed avocado
Picked onion
Your choice of toppings
Preparation
On the stove
Patty
- In a large bowl, combine ground pork, all spices and salt.
- Mix by hand or using a spatula until ingredients are fully incorporated.
- Divide mixture into 4 equal portions and shape into patties.
- Cook burgers on the grill or in a hot skillet for 6–8 minutes, turning halfway through cooking, until golden brown and fully cooked.
Mashed avocado
- Cut avocados in half, remove pit and scoop flesh into a bowl.
- Mash flesh with a fork until smooth.
- Add lime juice, salt and hot sauce to taste.
- Mix well and refrigerate until burgers are assembled.
Pickled onion
- Place sliced onion in a small bowl or jar.
- Combine water, vinegar and salt, then pour over onions.
- Let marinate for at least 30 minutes (ideally 1 hour) before serving.
Assembly
- Grill pineapple slices on the grill or in a skillet
- Lightly toast brioche buns.
- Place a pork patty, a slice of grilled pineapple, a little mashed avocado, pickled onions, cilantro and a spoonful of sour cream or Greek yogurt on each bun.
- Add hot sauce to taste, top with other half of burger bun and serve immediately.
