Pork Pad Thai

Preparation

On the stove

  1. In a pot of boiling water removed from heat, soak noodles for about 5 minutes or until they are still very al dente. Plunge in cold water and drain. Set aside.
  2. In a bowl, combine water, peanut butter, fish sauce, soy sauce, lime juice and sugar. Add eggs and mix to combine with a fork. Set aside.
  3. In a large skillet set over high heat, heat oil and lightly brown pork strips for about 2 minutes. Add garlic, ginger and pepper. Continue cooking for 1 minute. Add rice noodles and snow peas and stir until heated through.
  4. Over low heat, stir in sauce until noodles are nicely coated. Add a little water if sauce seems too thick. Serve immediately with toppings.
