Lemon & Sesame Pork Skewers

On the BBQ

  1. Using a rolling pin or the back of a spoon, crush 30 mL (2 tbsp.) sesame seeds between two sheets of plastic wrap.
  2. In a large bowl, whisk together the crushed sesame seeds with oil, soy sauce and lemon juice. Add pork cubes to the marinade and toss to coat. Cover and refrigerate for at least 20 minutes (or up to 6 hours).
  3. Preheat barbecue to medium heat or use a grill pan.
  4. Thread pork cubes onto the skewers, alternating with vegetables. Season with pepper to taste.
  5. Grill skewers on the barbecue or in the hot grill pan for 6–8 minutes, turning them using tongs and brushing regularly with marinade. Season with pepper. Sprinkle with remaining sesame seeds and serve.
  6. Serve with snow pea, palm heart and cherry tomato salad with a subtle garlic-infused dressing.
